Folded Kimbap Recipe — Triangle Gim Without a Mat
By Kimbap Curator
Folded (and nude) kimbap: half-sheet rice, thin fillings, triangle fold. Classic cylinders live on gimbap.ai.
TL;DR
Spread thin rice on half a gim sheet, keep fillings thin, fold into a triangle. Nude is rice-outside. Long methods: /blog/how-to-make-folded-kimbap/ and /blog/nude-kimbap-how-to/.

Ingredients
- 2 gim, rice seasoned
- Ham, cheese, kimchi, tuna variations for fold
- Plastic for nude, no mat needed for fold
Steps
- Cook short-grain rice, cool until spreadable, season with salt and sesame oil. Hot wet rice tears gim.
- Folded: lay gim shiny-side down, thin rice on one half, fillings in a shallow line, fold and press into a triangle. Do not slice.
- Nude: spread rice on plastic, lay gim on the rice, add thin fillings, roll with the plastic, sesame the outside, slice with a wet knife.
- Drain tuna and squeeze kimchi. Spread cream cheese; do not pour it.
